Our Irish Adventure: Pubs, Food, and Unforgettable Memories
In May 2023, we finally embarked on a long-awaited trip to Ireland, and what an incredible experience it turned out to be! The journey was shared with my wife and my parents, making it all the more memorable as we explored the heart of Irish culture, especially through its pubs and food. From the bustling streets of Dublin to the picturesque coastal town of Kinsale, we immersed ourselves in the best of Ireland’s hospitality.
Dublin’s Pub Scene: A Blend of Tradition and Charm
Our adventure kicked off in Dublin, where we dove headfirst into the city’s vibrant pub scene. No trip to Dublin is complete without a visit to the iconic Temple Bar. Famous for its lively atmosphere, traditional music, and wide selection of beers, Temple Bar set the perfect tone for the start of our trip. We spent a couple of hours soaking in the energy of the place, chatting with locals, and enjoying a pint of Guinness.
Another great spot we visited in Dublin was The Auld Dubliner, a traditional pub that exudes old-world charm. The atmosphere here was cozy, with dim lighting and warm wood interiors that made it feel like we had stepped into a piece of Dublin’s history. Not far from there, we also found Merchant’s Arch, another fantastic pub with a great location by the River Liffey. The live music was fantastic, and the friendly vibe made it an instant favorite among us. We ended up returning there for dinner one night, and the food was absolutely delicious. The beef stew and Irish lamb were among the standouts, and the hearty portions were the perfect match to the chilly Irish evening.
Kilkenny and Kinsale: Exploring the Heart of Ireland’s Pub Culture
Our next stop was Kilkenny, a charming medieval town known for its impressive castles and narrow streets lined with colorful shops. In Kilkenny, we had the pleasure of visiting Kytellers Inn, a traditional pub with a rich history that goes back over 600 years. The pub’s interior is full of character, with its medieval-style architecture and warm, welcoming ambiance. But what really made this place stand out was the food. We were treated to an unforgettable meal—roast lamb with rosemary potatoes and seafood chowder that warmed us from the inside out. If you ever find yourself in Kilkenny, Kytellers is a must-visit for both the food and the atmosphere.
After Kilkenny, we made our way south to Kinsale, a picturesque seaside town in County Cork. Here, we stopped at The Spaniard, a pub known for its historic character and cozy, rustic feel. The pub sits on the edge of the harbor, offering beautiful views of the water. The fish and chips were particularly good, and we enjoyed relaxing by the sea while savoring every bite.
Waterford: A Perfect Ending
Our last stop before heading back was Waterford, where we enjoyed a drink and dinner at The Reg. This pub is renowned for its great food and inviting atmosphere. The highlight of our visit to The Reg was the Pot Roast Chicken, a dish that immediately stood out as one of the best meals we had during our trip. It was tender, flavorful, and served with a rich, savory sauce that we couldn’t get enough of. The food at Merchant’s Arch, Kytellers Inn, and The Reg truly elevated our pub experience, and we’re now on a mission to recreate that Pot Roast Chicken at home.

Our trip to Ireland was more than just a visit to some amazing pubs. It was about experiencing the warm hospitality of the Irish people, enjoying fantastic food, and creating memories that we’ll cherish forever. The pubs we visited—from the historic taverns of Dublin to the cozy nooks in Kilkenny, Kinsale, and Waterford—were the perfect backdrop to this unforgettable journey. We left with not only a greater appreciation for Irish culture but also a newfound love for Irish cuisine, especially the incredible meals we had along the way.
