I decided to record my own trek toward visiting every country in the world (OK, maybe I won’t make it to visit every country, but I would like to get close). While I have a long way to go, and an increasingly short time to get there, even the longest journeys begin with one step. These are the working man journeys.

Exploring Nantes and Amsterdam: Two Cities, One Unforgettable European Journey
In November, 2024, I had the incredible opportunity to speak at a conference on entrepreneurship in Nantes, France, followed by a visit to Amsterdam, Netherlands. These two cities offered a perfect blend of professional experiences, cultural exploration, and historical charm. Here’s a look at what made this trip so unforgettable. Though vastly different in character, both cities offered unique experiences, from historical landmarks and striking architecture to delectable food and charming streets. Here’s a glimpse into my unforgettable journey through these two beautiful destinations.
The journey began in Nantes, a city in western France known for its maritime history, stunning architecture, and commitment to art and innovation. Located along the Loire River, Nantes is a city that beautifully blends the old with the new, offering both historical landmarks and cutting-edge modern attractions.
After the conference sessions, I took the opportunity to explore the old town of Nantes, a charming area full of history, winding streets, and impressive architecture. The Place Royale, a grand square surrounded by classical buildings, was a great starting point. From there, I wandered through the Bouffay District, one of the oldest neighborhoods in the city, where medieval and Renaissance buildings sit side by side with trendy cafés and boutique shops. The narrow cobblestone streets were lined with colorful facades and vibrant flower boxes, giving the area a welcoming, almost timeless feel.
A highlight of my walk through the old town was visiting the Cathédrale Saint-Pierre et Saint-Paul de Nantes. This stunning Gothic cathedral, with its soaring spires and intricate stained glass windows, provided a glimpse into Nantes’ rich history. It was a peaceful spot to pause and reflect, and the views from the cathedral’s surrounding square were beautiful.
One of the most unique attractions in Nantes is Les Machines de l’île (The Machines of the Isle), a whimsical mechanical park located on the former shipyards. Inspired by the world of Jules Verne, the Machines are a fascinating blend of artistry and engineering. The centerpiece is a towering mechanical elephant that walks around the park, allowing visitors to ride on its back. It’s an unforgettable experience, one that combines fantasy and reality in a way that only Nantes can offer.
Amsterdam: Canals, Culture, and Charm
After my time in Nantes, I hopped on a flight to Amsterdam, a city renowned for its picturesque canals, vibrant neighborhoods, and rich cultural scene. Amsterdam offers an entirely different atmosphere from Nantes, but it’s no less captivating.
Amsterdam’s canals are not only a UNESCO World Heritage site but also the beating heart of the city. The peaceful boat ride gave us a unique perspective on the city’s historic architecture and allowed us to relax while taking in the sights.
Amsterdam is a city of art and culture, and we made sure to visit some of its iconic museums. The Rijksmuseum, home to masterpieces by artists like Rembrandt and Vermeer, was a highlight. Wandering through its vast galleries, we were able to appreciate some of the world’s most famous paintings, each telling its own story of Dutch history and artistry.
Another must-see was the Van Gogh Museum, which houses the largest collection of Van Gogh’s work in the world. The museum offers a fascinating journey through the artist’s life, from his early, somber paintings to the vibrant, expressive works he became known for. The museum’s quiet, reflective atmosphere made it a perfect place to connect with the art.
Another unique spot was De Pijp, a multicultural neighborhood with a lively atmosphere, colorful street art, and vibrant markets. We stopped at Albert Cuyp Market, where we sampled Dutch cheeses, fresh herring, and other street foods while mingling with locals and visitors alike.

Located just a short distance from the conference venue, the hotel was not only convenient but also offered a comfortable and luxurious retreat after a day full of sessions and networking. Exploring Washington, DC’s Culinary Scene
Washington, DC, is known for its vibrant culinary scene, and I made sure to savor some of the best it has to offer. One evening, I had dinner at Old Ebbitt Grill, a restaurant steeped in history. Established in 1856, it’s the oldest saloon in the city, and dining there felt like stepping back in time. The experience was more than just a meal—it was a connection to the tradition and legacy of Washington, DC, making it a must-visit for anyone exploring the city.
For lunch, I had the pleasure of dining at the Cosmos Club, an institution that exudes elegance and intellectual charm. Located on Embassy Row, the Cosmos Club has been a gathering place for leaders in various fields since its founding in 1878. The grand setting, with its beautifully appointed rooms and impressive library, fostered a sense of intellectual curiosity and thoughtful conversation. The meal was as exquisite as the company, making the visit a truly special experience.

Taking a break from the academic sessions, I attended a Nationals game. The energy in the stadium was contagious, and it was a great way to unwind and enjoy America’s favorite pastime. The game offered a perfect blend of excitement and relaxation, reminding me of the importance of balancing work with leisure.

No trip to Washington, DC, is complete without exploring its world-renowned museums. I made sure to visit the Smithsonian American History Museum, where I immersed myself in the exhibits showcasing the rich tapestry of American history. From the original Star-Spangled Banner to the First Ladies’ Inaugural Gowns, each display provided a deeper understanding of the nation’s past and present.

The combination of the salty prosciutto and the sweet, juicy melon was simply divine, providing a true taste of Italian culinary tradition.
A Touch of Hollywood
Lake Como has also served as the backdrop for various films, adding a touch of glamour to its natural beauty. One of the highlights of my visit was seeing the villa where scenes from the James Bond movie “Casino Royale” were filmed. Villa del Balbianello, with its stunning architecture and panoramic views of the lake, was instantly recognizable and added an exciting element to my trip.

Exploring San Diego: A Blend of Business and Leisure
Toward the end of summer, I had the opportunity to travel to San Diego, where I presented a paper at the Academy of Legal Studies in Business Annual Conference. This prestigious event brought together scholars, legal experts, and professionals from across the country, offering a chance to exchange ideas, share research, and explore new developments in the world of business law.
The conference was held at a beautiful hotel right next to Seaport Village, an iconic waterfront shopping and dining destination. Seaport Village is known for its charming atmosphere, with cobblestone paths, a wide variety of unique shops, and plenty of outdoor seating where one can enjoy the sea breeze. The location was perfect for relaxing after a day of academic discussions and networking. I made sure to take advantage of the peaceful surroundings and went on a leisurely stroll along the harbor, soaking in the beautiful views of the water and the distant skyline.
In addition to attending the conference, I also found time to explore some of San Diego’s most famous landmarks. One of the highlights was a visit to the world-renowned San Diego Zoo. Located in Balboa Park, the zoo is home to thousands of animals from across the globe and features lush landscapes and fascinating exhibits. I spent hours there, marveling at the wildlife and learning more about conservation efforts, all while enjoying the pleasant San Diego weather.
Another must-see attraction was the USS Midway, a retired aircraft carrier turned museum. It’s located right by the water, and stepping aboard this historic ship gave me a deeper appreciation for the men and women who served aboard it. The exhibits on aviation and naval history were incredibly well done, and I enjoyed walking through the various decks, checking out the fighter jets, helicopters, and interactive displays. It was a true testament to the innovation and resilience of the U.S. Navy.
Lastly, I couldn’t visit San Diego without experiencing the excitement of Petco Park, home of the San Diego Padres. Whether or not you’re a baseball fan, the ballpark itself is a sight to behold. Located in the heart of downtown, Petco Park combines modern design with a nod to San Diego’s history and culture. Our Irish Adventure: Pubs, Food, and Unforgettable Memories
In May 2023, we finally embarked on a long-awaited trip to Ireland, and what an incredible experience it turned out to be! The journey was shared with my wife and my parents, making it all the more memorable as we explored the heart of Irish culture, especially through its pubs and food. From the bustling streets of Dublin to the picturesque coastal town of Kinsale, we immersed ourselves in the best of Ireland’s hospitality.
Dublin’s Pub Scene: A Blend of Tradition and Charm
Our adventure kicked off in Dublin, where we dove headfirst into the city’s vibrant pub scene. No trip to Dublin is complete without a visit to the iconic Temple Bar. Famous for its lively atmosphere, traditional music, and wide selection of beers, Temple Bar set the perfect tone for the start of our trip. We spent a couple of hours soaking in the energy of the place, chatting with locals, and enjoying a pint of Guinness.
Another great spot we visited in Dublin was The Auld Dubliner, a traditional pub that exudes old-world charm. The atmosphere here was cozy, with dim lighting and warm wood interiors that made it feel like we had stepped into a piece of Dublin’s history. Not far from there, we also found Merchant’s Arch, another fantastic pub with a great location by the River Liffey. The live music was fantastic, and the friendly vibe made it an instant favorite among us. We ended up returning there for dinner one night, and the food was absolutely delicious. The beef stew and Irish lamb were among the standouts, and the hearty portions were the perfect match to the chilly Irish evening.
Kilkenny and Kinsale: Exploring the Heart of Ireland’s Pub Culture
Our next stop was Kilkenny, a charming medieval town known for its impressive castles and narrow streets lined with colorful shops. In Kilkenny, we had the pleasure of visiting Kytellers Inn, a traditional pub with a rich history that goes back over 600 years. The pub’s interior is full of character, with its medieval-style architecture and warm, welcoming ambiance. But what really made this place stand out was the food. We were treated to an unforgettable meal—roast lamb with rosemary potatoes and seafood chowder that warmed us from the inside out. If you ever find yourself in Kilkenny, Kytellers is a must-visit for both the food and the atmosphere.
After Kilkenny, we made our way south to Kinsale, a picturesque seaside town in County Cork. Here, we stopped at The Spaniard, a pub known for its historic character and cozy, rustic feel. The pub sits on the edge of the harbor, offering beautiful views of the water. The fish and chips were particularly good, and we enjoyed relaxing by the sea while savoring every bite.
Waterford: A Perfect Ending
Our last stop before heading back was Waterford, where we enjoyed a drink and dinner at The Reg. This pub is renowned for its great food and inviting atmosphere. The highlight of our visit to The Reg was the Pot Roast Chicken, a dish that immediately stood out as one of the best meals we had during our trip. It was tender, flavorful, and served with a rich, savory sauce that we couldn’t get enough of. The food at Merchant’s Arch, Kytellers Inn, and The Reg truly elevated our pub experience, and we’re now on a mission to recreate that Pot Roast Chicken at home.
A Trip to Remember
Our trip to Ireland was more than just a visit to some amazing pubs. It was about experiencing the warm hospitality of the Irish people, enjoying fantastic food, and creating memories that we’ll cherish forever. The pubs we visited—from the historic taverns of Dublin to the cozy nooks in Kilkenny, Kinsale, and Waterford—were the perfect backdrop to this unforgettable journey. We left with not only a greater appreciation for Irish culture but also a newfound love for Irish cuisine, especially the incredible meals we had along the way.
Now, back home, we’re determined to master the art of making Pot Roast Chicken just like we had at The Reg in Waterford, so we can relive a little piece of Ireland every time we cook. If you’re planning a trip to Ireland, be sure to explore the pubs, taste the food, and take in the sights—you’ll be glad you did.
